Home-made cuisine at Conca Park: a love story

At Conca Park Hotel in Sorrento we love taking care of our guests and one of our first concerns is their appetite. As a famous quote says – and we definitely agree - "how can you think well, sleep well, love well, if you have not eaten well?

This explains our dedication to good food, from breakfast to dinner, to the snack to nibble by the pool. Because a delicious bite can always improve your day and turn a holiday in Sorrento in a real pleasure. Our culinary proposal is complete, refined but also informal, it satisfies the hunger and the desires of the moment.

Without forgetting the green soul of our kitchen: every day, in our buffet, we insert a “recycled” dish. The rigatoni al pomodoro of the evening before are tasteful when covered with a delicious crust once in the oven, together with a generous touch of mozzarella. Not to mention the various types of rolls we create starting from grilled vegetables: versatile and soft at the right point, they fit any type of stuffing. At Conca Park Hotel we never forget the values ​​of the Zero Waste project, even when we are going to eat.

 

Ingredients first of all

Our cuisine is home-made, like the one you find in your favorite places in town and that you cook for family and friends. What makes the difference by us is the quality and freshness of the ingredients. From reliable suppliers we buy seasonal raw materials, fresh daily, artisan cheeses and salamis, wines from selected Campania and Italian vineyards. The icing on the cake is our private vegetable garden, a symphony of flavors cultivated with steady passion: herbs, fruit, vegetables. Among these, this year the main characters were tomatoes, real natural sculptures, immortalized by many of our guests. In August, many of them reached weights of over 1.2 kg!

Another indissoluble binomial, in our kitchens, is between tradition and territory: we proudly prepare the typical cuisine of the Sorrento peninsula, where fresh fish, tomatoes and mozzarella are absolute protagonists, and we also cultivate the cult of Italian classics. So, next to the gnocchi alla sorrentina and tagliolini with lemon, in the menu you find the rigatoni alla bolognese, spaghetti alla carbonara and pennette alla siciliana. We encourage the dishes of Italian regions as an asset, always with the smart approach of our 4-star hotel.

 

 

Food & Drink professionals

Talking about stoves, at Conca Park Hotel we immediately think at our chef Cataldo Mascolo, leading a team of nine people, who define themselves as a family.

The chef is a true pillar of our kitchens, where he kneads, fries and cooks since 1982. In his long career several technologies succeeded, such as induction hobs, and training courses to create yummy dishes both for eyes and palate. His specialty is fish, which he proposes in many variations, but his favorite is the "ricciola au gratin with julienne of fresh crunchy vegetables". We recommend you to taste it, it is a crunchy delicacy!

Also, pizzas coming out of his oven are worth a taste: they are masterpieces in flavor and creativity, and his yummy panzerotti too! In our menu you will not only find the classic margherita and marinara, but also brilliant combinations such as gorgonzola and walnuts, pumpkin cream and scamorza, pesto and mortadella and many others. Cataldo loves trying always new recipes, working with great smiles, passion and simplicity.

The other side of the coin, a true professional in hospitality, is Michele Cretella, Food & Beverage manager, working with the Russo family for 28 years. The owner Mariella and her son rely on his experience for everything related to customer care, in addition to the management of bars and restaurants. At the entrance of our Sorrento citrus grove, Michele is the big smile at your arrival, as the hand shaking yours in the welcome phase. The first contact with guests is his specialty, but he also checks that the kitchens have all the necessary for tasty dishes and varied menus every day, with a special attention to update the wine list. Another task is the compliance with the sanitary and safety requirements of our hotel. He agrees with the chef about the best place in our region, the wonderful Amalfi Coast, even if his greatest passion is walking in the mountain paths.
